Recipe: Quick Home-made Tomato Soup
Recently, I posted the chocolate mug cake recipe as I thought it might be useful for my son who is off to university-land later this year. He's keen now to learn how to cook quick, cheap and nourishing meals, so here's one I got him to make for us a couple of days ago.
We are great lovers of tomato soup in this house, and think home-made is SO much better than the shop-bought tinned stuff. Don't get me wrong, tinned soup is great because it's convenient (and I guess number one son will eat a lot of it during his time at uni!), but I always find it quite concentrated... He was surprised how good this soup tasted when we sat down to eat it, and commented on how easy it was. So, here's the simple, quick and cheap recipe, and I hope you like it.
Ingredients:
1 tin chopped tomatoes
1 onion, blitzed in a food processor
Olive oil
1 vegetable stock cube
250ml boiling water
Mixed or Italian herbs
Salt and pepper to taste
A squirt of tomato puree (around 1 teaspoon-full)
A squirt of tomato ketchup (or sugar to taste)
Method:
Blitz the onion in a food processor (so that it cooks quickly) and sweat it down for a couple of minutes in a lidded saucepan with the olive oil.
Add all the other ingredients, bring to the boil, then turn down to a simmer for 5-10 minutes (depending on how quickly you need to eat!).
Remove from the stove and blitz it in the food processor or use a hand held blender to puree the soup.
Serve with a sprinkling of grated cheese (I used Cheddar), croutons, toast, or fresh bread. We tried something different...tortilla chips...and they were lovely with the soup!
This recipe served 3 adults, but you can easily double up the quantities for more servings. You could add a couple of red peppers and sweat them down with the onion for a different twist.
